For a light lunch on Sunday I made my Spicy Pakora Patties. They are so easy and yummy I thought I’d share them with you.
Ingredients
1/2 cup besan (chickpea) flour
1/4 cup self raising flour
1 egg
1/4tsp Clive of India Curry Powder (don’t be tempted to add more or you will get a bitter uncooked spice aftertaste)
1 squirt Gourmet garden garlic
1 squirt Gourmet Garden ginger
1/2tsp dried hot chilli flakes
1 large carrot grated
1 medium potato grated
1/2 cup of mixed frozen vegetables
2 tbsp water
1 small onion finely sliced and diced
Salt to taste
Olive oil for cooking
Method
Place the two flours, the egg, water, garlic, ginger, curry powder and chilli flakes in a bowl. Mix with a wooden spoon until you get a smooth, thickish batter. Don’t make it too sloppy as you want it to coat the vegetables.
Then add the raw grated vegetables to the batter and mix well. Then add the frozen vegetables and mix thoroughly. Add a pinch of salt and you’re ready to cook them.
I use a non-stick frypan and a very small amount of olive oil, however if you prefer you can shallow fry them. I try not to have the pan too hot or the outside will cook too fast and the inside will not be cooked.
So, heat the pan first, add a little oil and then spoon in dollops of the mixture and flatten with the back of a spoon. Cook for 3 – 5 minutes until golden brown then flip over and cook the other side.
Serve with a little sweet chilli sauce or organic tomato sauce and “Voila!” A simple, easy, tasty and healthy lunch that the kids will also like even though there are heaps of vegetables in it.
